CHILI LIME AVOCADO TOAST WITH FRIED EGGS

Heat butter in a large nonstick skillet over medium heat and add eggs, 1 at a time. Cook until whites are set, reduce heat and cook, covered, 5 minutes for a medium yolk.

Ingredients

  • 3 Tbsp. Hellmann’s® or Best Foods® Chili Lime Mayonnaise Dressing
  • 2 ripe avocados
  • 1 Tbsp. butter
  • 4 large eggs
  • 4 (1/2-inch thick) slices sour dough bread, toasted

Direction

  1. Mash avocado and Hellmann’s® or Best Foods® Chili Lime Mayonnaise Dressing in small bowl and season, if desired with salt.
  2. Heat butter in a large nonstick skillet over medium heat and add eggs, 1 at a time. Cook until whites are set, reduce heat and cook, covered, 5 minutes for a medium yolk.
  3. Evenly spread avocado mixture on surface of toasted bread; then top each with a cooked egg. Serve garnish, if desired, with crumbled Cotija or queso fresco, chopped fresh cilantro and additional drizzle of Chili Lime Mayonnaise Dressing.
